Week 4:

Week 2:

 

Day 1: Grilled Salmon w/ Cilantro Ginger Sauce

Sesame Roasted Green Beans and Mixed Pepper Confetti

Jasmine Rice w/ Fresh Scallions


Day 2: Chicken Fajita w/ Fresh Peppers, Onions, and Cilantro

Grilled Corn with Chili Lime

Fresh Tomatillo Sauce 


Day 3: Zucchini Lasagna Boats

w/ Tomato, Mozzerella, and Fresh Fennel Sauce

Garlic Toast 


Day 4:  Grilled Steak Kebabs w/Fresh Peppers, Onion, and Pineapple

Cold 3 Bean Marinated Salad 


Day 5: Rosemary Chicken

Garlic Roasted Potatoes

Green Salad 


Day 6: Greek Style Turkey Burgers 

Feta Cucumber and Tomato Salad 


Day 7: Roast Beef Dinner w/carrots, onion, celery, potatoes

Green Bean Casserole

Week 1:

 

Day 1:  BBQ Pulled Pork (Arnold's Farm, with sauce from Eddie's Canning Co)

Coleslaw and Cucumber Pickles

Local veggies needed: Cabbage, carrots, cucumbers

Serve w : Cornbread (mix from Hazzard Free Farm)

 


Day 2:  Asian Veggie Sesame Stirfry 

Local veggies needed: Bok Choy or Napa Cabbage, Peppers, Scallions, Carrots, Mushrooms

Serve w : Buckwheat / Soba Noodles

 


Day 3:  Entree Salad with Strawberry Vinaigrette 

Local veggies needed: Swiss Chard/kale/salad mix , Cucumbers, Carrots, Beets, Radish, Mushrooms, Edible Flowers

Serve w : Goat Cheese (Gretta's Goats) and/or fruit, and/or garbanzo beans

 


Day 4: Tuscan Summer Squash Bake

Local veggies needed: Summer squash, Basil, Tomatoes

Serve w : Pasta and cheese (Holliberri Icelandics)

 

 

Day 5: Pan Seared Asian Ginger Pork  (Arnold's Farm)

Local veggies needed:  cucumbers, Sesame Green Beans

Serve w :  Jasmine Rice 

 


Day 6:  Baked Ham Dinner with Collard Greens & Bacon  (Arnold's Farm) 

Local veggies needed:  Collard Greens, Onions

Serve w :  Baked Scalloped Potatoes

 


Day 7: Beef Barley Soup  (O'Toole Farm)

Local veggies needed: Carrots, Onions, Tomatoes, Green Beens, Cabbage

 


Bonus: Fennel Sauce

Local veggies needed: Tomatoes, Peppers, Onions, Garlic, Fennel, Basil

Serve w: Lasagna or Pasta.  Optional:  Sausage (Arnold's Farm)
